Salmon Poke Bowl
							
"Easy Summer Salmon Poke Bowl 
Serves 1-2, adjust according to preference  

Originally from the island paradise of Hawaii, poke bowls are balanced meals that are nutritious as they are tasty. They also make for the perfect summer meal. Delicious, colorful, almost no-cook required bowls with just the right amount of heat.    

Ingredients:  
x2 cups cooked white rice  
x3 tbsp rice vinegar 
x1½ tsp sugar x½ tsp salt 
x200 g salmon sahimi  
2 tbsp soy sauce 
2 tbsp lemon juice 
x1 avocado (thinly sliced) 
x1 cucumber (thinly sliced) 
x 6 small sheets nori x¼ tsp toasted sesame seeds 
¼ tsp black sesame seeds 
x1 green onion, thinly sliced (for garnish)

Optional: x½ cup pickled ginger and x½ cup sriracha  

Preparation: 
1. Mix together the rice vinegar, sugar, and salt and pour over the rice while hot. Gently mix the cooked rice. Divide rice between x2 bowls. Cover and set aside. 
2. Using a very sharp knife, gently slice the salmon sashimi into ½-inch cubes. It may be easier to slice the salmon while frozen. 
3. Season the salmon in soy sauce and lemon juice. (Add sriracha to the mix if you want a touch of spice, optional) 
4. To assemble each bowl, top the rice with seasoned salmon, avocado, cucumber, ginger, green onions, nori sheets, toasted sesame seeds, and black sesame seeds. 
5. Serve immediately.   

Green Tip/s:   
Preparing salmon, tuna or fatty fish can generate a lot of scraps, depending on which part of the fish you are preparing. Instead of throwing them out, use them to make fish emulsion fertilizer. 

Here's how: 
1. Place fish scraps in a blender, add warm water, and blend thoroughly until you've created an emulsion.  
3. 2. Pour the mixture into a bucket. (with a lid that can be sealed tightly. 
5. 3. Mix the contents of the bucket daily or every by adding shredded newspapers, dried leaves, sawdust, or brown grass clippings 
7. 4. Pouring molasses or pureed fruit into the bucket will help control odor while also contributing healthy microorganisms to your organic fish emulsion fertilizer.  
8. 5. Wait 2 weeks until the entire mixture has turned dark brown before using.   "
