Banana Bread
"Have overripe, moist, and browning bananas? The worst thing you can do is throw them out. With this recipe, you will think twice before wasting these healthy, delicious and sweet treats. Banana Bread Recipe Ingredients: x1.5 cups (195 grams) all-purpose flour x1 tsp baking soda x.1/4 tsp fine sea salt x1/4 tsp ground cinnamon x4 medium bananas, overripe, heavily speckled or even black bananas are best, mashed x8 tbsp unsalted butter, melted and cooled x1/2 cup brown sugar x2 large eggs, lightly beaten x 1 tsp vanilla extract x1/2 cup nuts, chocolate chips and blueberries, optional Preparation: 1. Heat the oven to 350 degrees F. Line an 8 1/2-inch-by-4 1/2-inch loaf pan with butter and flour. 2. Place the pan on an insulated baking sheet or on two regular baking sheets stacked on top of the other. 3. Whisk the flour, baking soda, salt, and cinnamon together, set aside. 4. In a separate bowl, mash bananas until soft and pasty. Whisk the melted butter, brown sugar, eggs, and vanilla extract into the bananas until blended. 5. Scrape the sides and bottom of the bowl then add the remaining ingredients, stirring gently until they disappear and the batter is smooth. 6. Stir in optional ingredients for extra flavor. 7. Pour batter into the greased pan and smooth the top. Bake for 45-60 minutes. 8. Transfer the pan to cool. For vegan / egg-free banana bread: Replace the eggs with flax - mix 2 tablespoons flaxseed meal (ground raw flaxseed) with 5 tablespoons water. Set it aside for about 5 minutes to thicken then use to replace the eggs in the recipe. Green Tip While real and fresh produce goes bad faster and can be trickier to store, the nutrients and benefits they hold remain unmatched.
