Hearty Vegetarian Soup
" Looking for a hearty and nutritious soup with fresh ingredients for the rainy season? Then say no more. This nutrient-dense soup might just make you consider quitting instant ramen and noodle soups for good, especially since we can deliver the ingredients fresh from the farm, to your doorstep. Hearty Vegetarian Soup Ingredients: x1 tbsp vegetable oil x1 onion, diced x1 tsp red peppercorns x6 asparagus spears, chopped x1 medium-sized celery root, sliced x2 celery sticks, chopped x2 large carrots, sliced x ¼ cup rice x3 cups of stock or cubesof choice x3 bay leaves x1 tsp curry powder x¼ cup tomato sauce x¼ cup spring onion, chopped salt, pepper and chili flakes Preparation: 1. Heat vegetable oil in a soup pot over medium heat. Add onions and cook until tender. 2. Add the peppercorns, the chopped celery root and stick, and carrots. Season with salt and pepper, cook and stir for 1-2 minutes. 3. Add the rice and cook for 2-4 minutes. 4. Add the stock/cubes, bay leaves, and curry powder. Bring to a simmer, then cover for 20 minutes. 5. Add the asparagus, stir for 2-3 minutes. 6. add the tomato paste (and possibly water to reach your desired consistency) 6. Remove the bay leaves and serve garnished with chili flakes and spring onions. Green Tip Love using those celery stalks but don't know what to do it's leaves?
