Healthy Salsa
"This colorful dish can be eaten on its own, as a side for meat or fish, as part of a taco filling, with tortilla chips, or even over pasta. There's no reason not to make this, especially since a few Holiday potlucks are soon to commence. A mindful indulgence that can be enjoyed by anybody, in their own way. Ingredients: x1 cup olive oil x2 Yellow Corn (Shredded off the cob) x3 Tomatoes (diced) x3 Bell Peppers (diced) x1 Red Onion (diced) 1/4 cup freshly squeezed lemon juice x1 cup fresh cilantro Salt and pepper Optional: Jalapeno Peppers (for that added spicy kick) Black Beans (for a meatier texture) Preparation: 1. Boil, grill, or use your preferred method to cook the corn. 2. In a large bowl, combine all of the ingredients. 3. Add more ingredients depending on your preferences and needs 4. Season with salt, pepper, and lemon juice. Mix thoroughly. 5. Top the mixture with fresh cilantro. 6. Serve with tortilla chips, salad greens, fish, meat, tacos, and even pasta. The possibilities are endless! Green Tip An affordable, healthy, and sustainable Holiday gift idea: 1. Recycle old glass jars from the kitchen/pantry. Clean them and remove the labels 2. Make a big batch of healthy salsa (see last story or recipe highlights) 3. Place the salsa in recycled jars, add a pack of tortilla chips and give it away as gifts at your next Holiday gathering.
