Pomodoro Pasta
							
"Authentic Italian Pomodoro Pasta
Serves 4-6, adjust according to preference

A simple, Italian food staple that will give you that ""eat, pray, love"" moment. This love month, make this quick and simple dinner recipe at home for your loved ones. 

Ingredients: 
500g spaghetti noodles
x2 tbsp. extra-virgin olive oil
x1 white onion, finely chopped
x4 cloves garlic, minced
x6  tomatoes, cubed
or 500g cherry tomatoes, cubed
x1 pinch Salt
x1 pinch Black pepper 
crushed red pepper flakes
x2 tbsp. chopped basil leaves
whole basil leaves for garnish
Freshly grated parmesan  cheese, for garnish
x1 tsp. tomato paste (optional)
Â¼ cup red wine (optional)

How to prepare:
1. Cook pasta according to package directions. Set aside  Â½ cup of salted pasta water, then drain the rest. 
2. In a separate pot, heat olive oil over medium heat. Add onion and cook until soft, then add the garlic and cook for 1 minute. 
3. Add the cubed tomatoes and cook until juices are released. This should take at least 8 minutes on medium heat.
4. Season with salt, pepper, and red pepper flakes for desired spice levels. Reduce to low heat and let simmer for 15 minutes. Stir in the chopped basil leaves.. 
5. Add cooked pasta and Â¼ cup pasta water. Toss and mix thoroughly but do not overcook the noodles. Add more pasta water to bring sauce together as needed. 
6. Add the tomato paste and wine if you want thicker, tastier sauce. (optional)
7. Garnish with more basil and grated parmesan cheese. Serve.
